The organic olives from Flamingo Estate are grown in sun-soaked California valleys by small, family-owned farms. The chill of early winter brings the annual olive harvest, with the sweet richness of fresh pressed olives filling the air from November to January. Each olive varietal is selectively picked by hand + cold-pressed immediately to ensure critical freshness + rich antioxidant and polyphenol content. This unfiltered first press combines a blend of Spanish + Italian varietals for uniquely vibrant, green, and peppery brightness — balanced by softer fruit notes. Ideal for dipping or finishing, with a high smoke point of 420°F, making it versatile for cooking.
